Strawberry Salsa

Strawberry  Salsa                             serves 8

2 ½ cups strawberries, hulled and sliced                                                                2 tablespoons fresh parsley, chopped

1 sweet onion, diced                                                                                      1 tablespoon fresh cilantro, chopped

1 jalapeno pepper, seeded and chopped                                                              1/8 teaspoon pepper

1 cucumber, peeled, seeded and cubed                                                                ¼ teaspoon sea salt

1/3 cup honey                                                                                                   ¼ cup lemon juice

Place berries, onion, jalapeno, cucumber, parsley and cilantro in a large bowl.

In a small bowl, whisk together honey, salt, pepper and lemon juice.  Pour over fruit and stir gently.

Chill until ready to serve.
