Get To Know Your Vendor: H & H Sugarbush

H & H Sugarbush L.L.C. is a family run business making maple syrup since 2007.  The farm has been family run for well over 100 years.  Every spring the family taps maple trees throughout the woods and hand collect the sap.  In the 2011 season, they produced 50 gallons of syrup.  One interesting fact is that it takes about 40 gallons of sap to produce one gallon of syrup, and they boil all of the syrup in a sugar shack right outside the house on a wood fired evaporator.This business is definitely a family affair.  Kirk, Michelle,  Emma and Madeline Hedding (their two daughters) all help with the collection of sap and other odds and ends around the farm.   Come visit the Heddings at their booth by the entertainment at the market, and pick up some maple syrup for breakfast, maple candies or maple nuts – they’ve even made maple syrup flavored cotton candy!

 

Here’s a recipe from Kirk for Maple Glazed Salmon:
1/4 cup syrup
2 Tbsp soy sauce
1/2 tsp garlic salt
1 clove garlic
1/8 tsp ground black pepper
1 lb salmon

Marinate salmon in sauce, and then grill on a cedar plank or broil fish in the oven – enjoy!
