Healthy Halloween (Trick or) Treats

There are many reasons to love this time of year, not least of all pumpkins!  In the final installation of the fall Bushel Basket Market newsletter, we’re featuring the great pumpkin and other treats to get you in the mood for Halloween!
 
Pumpkin Seeds
This week we want to celebrate another new food of the week— pumpkin seeds. Pumpkins and pumpkin seeds belong to the same family as cantaloupe, watermelon, cucumber, and squash. Long valued as a great source of zinc pumpkin seeds are becoming increasingly recognized for their diversity of antioxidants, which makes them unique in their antioxidant support, such as providing a wide variety of forms of vitamin E.

 
Pumpkins Aid Weight Loss
Pumpkin is an often-overlooked source of fiber, but with three grams per one-cup serving and only 49 calories, it can keep you feeling full for longer on fewer calories. A fiber-rich diet seems to help people eat less, and thereby shed pounds. A 2009 study found that people who ate a whole apple before lunch (the fiber is in the skin) consumed fewer calories throughout the meal than people who ate applesauce or drank apple juice, WebMD reported (Huffington Post, 2013).

Sweet and Spicy Pepitas Popcorn Balls

Ingredients

3 (3.5-ounce) bags natural microwave popcorn
2 cups pepitas (hulled pumpkin seeds)
1 cup heavy cream
1 cup sugar
1/2 cup honey
2 tablespoons unsalted butter, cut into pieces, plus more for forming
1/4 teaspoon fine salt
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/2 teaspoon cayenne pepper

Preparation

Pop the popcorn according to package instructions. While hot, carefully open package and dump into a large bowl.

Toast the pumpkin seeds in a large skillet over medium-high heat, until browned and popping, tossing and stirring occasionally, about 4 minutes. (Do this in batches, if needed.) Add to the popcorn.

Make caramel: Warm the cream over low heat and keep warm while you cook the sugar. Put the sugar and corn syrup and in a deep, heavy-bottomed large saucepan. Cook over medium heat, stirring occasionally until the sugar dissolves. Stop stirring, raise heat to medium-high, and simmer until the sugar reaches the hard crack stage, or 305 degrees F on a candy thermometer, about 7 minutes.

Whisk the butter and salt into the sugar mixture. Gradually pour in the cream and vanilla taking care since the mixture will bubble up. Reduce the heat to medium and continue to cook, stirring occasionally, until the sugar reaches soft ball stage, 240 degrees F on the thermometer, about 5 minutes more. Immediately remove from the heat and stir in the cinnamon and cayenne. Cool for about a minute. Pour caramel over the popcorn and stir to evenly coat.

When the popcorn is cool enough to handle, coat your hands with some butter and shape into 4-inch balls. Wrap in waxed paper and tie with a string, if desired. Serve or store covered at room temperature for up to a week.

Golden Pumpkin and Walnut Loaf

Ingredients

1 1/4 cups all-purpose flour (about 5 1/2 ounces)

1/2 cup yellow cornmeal

1 1/2 teaspoons baking powder

1 teaspoon ground ginger

1/2 teaspoon salt

1/4 teaspoon baking soda

1/4 teaspoon ground cardamom

1/4 teaspoon ground mace

3/4 cup packed dark brown sugar

1/2 cup granulated sugar

2 large eggs, lightly beaten

1 cup pureed pie pumpkin

3 tablespoons canola oil

1 1/2 teaspoons vanilla extract

1 cup golden raisins

1/2 cup chopped walnuts

Cooking spray

Preparation

 

Preheat oven to 350°.

Lightly spoon flour into dry measuring cups; level with a knife. Combine flour and next 7 ingredients (through mace) in a large bowl; make a well in center of mixture.

Combine sugars and eggs in a medium bowl, stirring with a whisk. Add pumpkin, oil, and vanilla; stir well. Add raisins and nuts; add to flour mixture, stirring just until moist. Spoon batter into a 9 x 5-inch loaf pan coated with cooking spray. Bake at 350° for 50 minutes or until a wooden pick inserted in center comes out clean. Cool 10 minutes in pan on a wire rack, and remove from pan. Cool completely on wire rack.

Ingredient for In-Season Recipe

Kapnick Orchards: Several varieties of  apples (honeycrisp, Gala, Cortland, Yellow Delicious, Empire, Jonathon), plums, pears, fudge, bread and baked sweet rolls.  Cider and donuts for fall!

Kapp Farms: baked goods, pretzels, bread twists, some fall vegetables.

Lutchka Angus and Farm Market: Fall vegetables, hot and sweet peppers, gourds, *pumpkins.

Oak Hill Farm: Oak Hill Farm will not be with us this week!

Lutz Orchards:  Heritage apple varieties, like Greening, Wolf River, Snow Apples, Northern Spy and Baldwin, plus McIntosh, Cortland, and Jonathon (May not be here if the product is unavailable)

Mark’s Farms and Greenhouse: Maple syrup and a large variety of fall vegetables.  In season vegetables include winter squashes, kohlrabi, spaghetti squash, onions, broccoli brussel sprouts, cabbage, carrots, kale, leeks, lettuce peppers, *pie pumpkins, swiss chard and cauliflower.

Golden Fleece Farm, LLC: Assorted grass fed beef products (no GMO) at 3.5-4.5 pounds at $5 per pound (all out of chicken and oxtail).  This week, they have both fresh and cured cuts: sausage, chorizo, brats, chops, ribs, ham steaks and on and on. The pigs have been raised on  organic feed. 

Good Times Kettle Corn:  Will no longer be able to come to the market this week.

Greystone Creamery: feta, possibly ricotta, Man-chel cheese, possibly cow Gouda, Chelsea-cam, Rosy-cam, blue Man-chel, sheep Gouda, butternut, garlic pepper and plain cream cheese.

Pregitzer Farm Market, LLC: Assorted fall vegetables.  In season vegetables include peppers, onions, cauliflower, eggplant, and fall squashes.  Pregitzer hopes to be with us this week, with brussel sprouts, potatoes and other winter vegetables.

Janet’s LLC: If not too hot, Halloween chocolate goodies, grilling rubs, jam, flavored nuts, suckers, Cajun butter, assorted fudge. spices to make flavored butter, U-M and MSU dolls and greeting cards.

Mama Mo: No longer at the Bushel Basket Farmers Market for the rest of the year!  Please visit them at the Chelsea Farmers Market on Saturday mornings.

Bordine Farm: No longer at the market this week.

Enrichment Center: Vegetables, candles, lip balms, lotions, bracelets, wooden toys, hand sanitizers, soaps, pens with decor that changes with the season.  Come and support breast cancer awareness month with the Enrichment Center, with pink painted garden rocks, fairy doors, and pink soaps.

Stone Hearth Breads and Bakery: Stone Hearth is back this week at the Bushel Basket Market!  Check out all your favorite breads, including:  pumpernickel, German rye and German rye seeded, Italian Milano, honey whole wheat, San Francisco sourdough, assorted cookies and buns, four-cheese pepperoni rolls, spinach feta cheese bread, multi-grain bread, country loaf, cheese bread, rosemary herb and tomato basil bread, four-cheese bread sticks, jalapeno cheese bread and assorted sweet breads — including cinnamon, cinnamon raisin, strawberry white chocolate, peach pecan, wild blueberry cream cheese, Reuben rolls, and bacon cheddar beer bread.
