GREEN BEANS WITH CARAMELIZED ONIONS 8 servings
2 lbs. Fresh green beans 1 ½ T. sugar
2 T. butter 1 T. red wine vinegar
2 medium onions 1 c. chicken or vegetable stock
salt and pepper TT
Wash beans. Trim off ends.
Fill a large saucepan 2/3 full of water. Add salt. Bring to boil.
Drop in beans. Cook uncovered, 3-4 minutes, until tender crisp.
Drain. Immerse in ice water to cool and to stop cooking.
In large saute pan melt butter over medium heat. Stir in onions. Cook slowly 15 to 20minutes, until onions are wilted and golden in color.
In a medium saucepan heat stock to boiling. Boil until reduced to ¼ cup. Stir in sugar and vinegar, then stir in onions. Simmer over low heat until liquid is slightly reduced. Stir in beans and heat through. Season with salt and pepper.
