Well, you all have waited very patiently for me to post this amazing slaw recipe (after we ran out of copies!). So here it is! Take from the food demo on July 15th.

Simply Delicious Slaw
4 cups thinly sliced cabbage (about 1 medium)*
3 large carrots
1 large cucumber 6 green onions
¼ cup chopped fresh parsley 1 tablespoon chopped fresh mint
¾ cups pepitas or other seeds
Dressing:
¼ cup olive oil 2 tablespoons honey
3 to 4 tablespoons lemon juice 1 clove garlic, minced
½ teaspoon ground cumin ½ teaspoon kosher salt
Peel carrots. Cut into thin matchsticks, about 1/8 inch wide and 2 inches long.
Peel cucumber. Cut in half lengthwise. Remove seeds with a spoon. Slice thinly.
Slice green onions on the bias (at an angle) thinly.
Put cabbage. Carrots, cucumber, green onions, parsley and mint in a large bowl.
Pan roast seeds until aromatic. Set aside to cool.
In a small bowl whisk together dressing ingredients.
Pour dressing over vegetables. Toss.
Add seeds. Toss again.
Refrigerate until ready to serve.
*Remove core before slicing cabbage.
